The concept of a "detox" seems ridiculous when it tends to just end up a potentially sugar-filled smoothie. Since I'd rather take my sugar in cake and cookie form, and find salads cold these days, turning it into a relatively healthy soup seems like a decent alternative. Not a bad result from the couple times I've tried it.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 1-3 tbsp chopped garlic (1-3 cloves)
- (optional) mixed vegetables, eg. celery, carrots, leeks, cucumbers, etc.
- 1 large container mixed salad greens (eg. 50/50 spinach and red lettuce)
- 1 tbsp rosemary
- salt & pepper to taste
- 2 L water
- 1.5 cups milk
Directions
- Saute in olive oil the onion, garlic, and any vegetables that do well with sauteing (eg. celery, leeks)
- Toss in vegetables, salad greens, rosemary, salt & pepper, and water
- Bring to a boil, then simmer for 20-45 min
- Add milk, again bring to a boil and simmer for 20 min
- Puree
Makes enough for 6-8 portions.
